Top Salad Recipes for National Salad Month

Can you believe it’s May? I feel like New Year’s Eve was yesterday, but somehow it’s almost summer!  My fiance proposed on October 6, 2016 and the days between the best day ever and today have moved faster than I would like them too.  Anyone who spends much time with me will tell you how important the little things are to me.  I especially like to celebrate small moments; whether the moments are quiet time in the morning, cooking dinner and sipping red wine in the evening, or simply taking time to recognize the changing of the seasons, the little things are what make me feel whole.

 May is National Salad Month, and I would love nothing more than sharing recipes and ideas with you all. You may be surprised to learn that I historically hated salad; in fact, I didn't eat a salad until I was 19 years old.  At the time I was living with @kristdeangelis whom is now a Registered Dietician, and Kristen taught me to use vegetables and disguise some of the more bitter flavors by balancing and using different foods. I'm happy to say, I am a now a veggie lover and creating some recipes of my own.

ON THE GO: Kale Salad from Kale Me Crazy

Sometimes, I am just too busy to cook at home, but I know it's no excuse for calling granola bars lunch or snacking on peanut butter straight from the jar. I In Atlanta, I love grabbing a quick and healthy bite from Kale Me Crazy. My absolute FAVORITE  offering is the Quinoa Salad infused with cabbage, quinoa, serrano peppers, scallion, mint, cilantro, craisins, carrots, crushed peanuts, and hemp seeds. This salad has two dressing options, lemon and peanut.  I am partial to the peanut as I find my body craves the extra protein and healthy fats; however, sometimes I choose lemon and order a side of hummus as well.

AT HOME: Strawberry Chicken Spinach Power Salad

 I love mixing fruits and veggies in my salads to create a sweet and savory balance. In the spring and summer when strawberries are in season, I like to use the rich sweet flavors to enhance salads and dressings.  This recipe was originally inspired by a fellow blogger friend of mine, Lean Green Bean; however, I've played around with some different variations to create the recipe that seems perfect to me. AT HOME: Zesty Grapefruit Summer Salad

For all my Whole 30 ladies, you’re going to love this. I found the Whole30 Zesty Grapefruit Summer Salad and it has become a fast favorite at my house! My fiance and I are always mindful of eating a well-balanced and nutritious diet; however, with the wedding quickly approaching we are paying extra attention to eating mindfully.  This salad is packed with arugula, cantaloupe, grapefruit, almonds and various other nutritious favorites. Carly Grace Milyo

Born in New York City,  Carly Grace grew up in Atlanta and graduated from The Westminster Schools.  Carly received her Bachelor of Science in Human Development, and graduated Summa Cum Laude from Virginia Tech in 2012. During her college career, Carly began practicing yoga as an escape from her intense ACC Cheerleading training. The rigor and requirements Carly upheld as an ACC athlete combined with the social expectations and action packed schedule expected of an Alpha Phi left Carly depleted both physically and mentally.  Before Carly found yoga, she used running, partying with friends, and restricting her diet to maintain a sense of control in her life. It was Carly's true desire to find more purposeful and authentic friendships and to invest her time in cultivating her greater well-being and spirituality that lead her to yoga. 

The creativity and physical challenge of yoga captivated and inspired Carly. Yoga was the first thing Carly practiced where the perfect-ten mentality was not required; in fact, perfection is the antithesis of yoga principles.  After hanging up her poms poms and retiring from her ACC Cheerleading career, Carly quickly found herself  invested in the In Balance Yoga Community in Blacksburg, VA.  With encouragement and affirmation from Studio Owner, Becky Crigger, Carly set out for New York City to train with Dana Trixie Flynn at Laughing Lotus Love Skool.

Yoga Alliance 200 E-RYT, Carly has studied and practiced with many influencers and teachers all over the United States.  Carly currently teaches Thunderbolt Power Yoga®;  a powerful alignment based vinyasa flow inspired by some of her greatest influencers including, Dana Trixie Flynn and Baron Baptiste.  Carly infuses creative ideas and sequencing into her classes. Her purpose as a teacher is to inspire people to move like themselves. Carly is committed to helping students be audaciously playful in both their practice and in their lives.
