Healthy & Quick Go-To Summer Side Dishes

Maybe it’s my southern roots showing, but I love side dishes, I could make an entire meal out of side dishes, especially in the summer. There are a few go-to recipes I keep in my back pocket for impromptu entertainment.

You can find all of my favorite go-to recipes on my Pinterest page, but here are a few highlights that I’ve tried, tried again, modified and love — they’re sure to wake-up your appetite and leave your taste buds happy!

Spicy Roasted Cauliflower

It’s quick, healthy and has a nice added kick from the spices. I love serving this with a greek yogurt sauce and grilled chicken to cool the dish down.

What you’ll need: 1 head of cauliflower, 2 cloves of crushed garlic, red pepper flakes turmeric, cumin, salt, olive oil

  • Preheat the oven to 350 degrees.

  • Rinse and chop the cauliflower.

  • Toss with 2 Tbsp of olive oil and equal parts turmeric, red pepper flakes, cumin and salt. (I suggest 1 Tbsp of each!)

  • Spread across a lined baking sheet and bake for 20 minutes, or until cauliflower starts to brown

  • Serve! (Optional Bonus— add cilantro for a touch of flavor and color)


Quick Quinoa Salad

This is a great recipe to whip-up and keep in the refrigerator all week.

What you’ll need: quinoa, chopped feta cheese, canned black beans (drained and rinsed), corn (off the cob), chopped fresh spinach, diced red onion.

  • Cook the quinoa according to package instructions. Once it’s cooked, allow to cool to room temperature.

  • Toss quinoa with remaining ingredients.

  • Serve! (Optional Bonus— it tastes great on its own, but you can add a quick dressing of olive oil, lemon juice, salt and pepper to taste.)


Roasted Okra

Most southerners  serve okra fried, but okra is actually delicious when roasted properly.

What you’ll need: fresh okra (halved), olive oil, salt, pepper

  • Preheat oven to 425

  • Toss okra in olive oil, salt and pepper

  • Spread evenly across lined baking sheet

  • Bake for 10-15 minutes, or until okra is crisp-tender.

Born in New York City,  Carly Grace grew up in Atlanta and graduated from The Westminster Schools.  Carly received her Bachelor of Science in Human Development, and graduated Summa Cum Laude from Virginia Tech in 2012. During her college career, Carly began practicing yoga as an escape from her intense ACC Cheerleading training. Yoga was the first thing Carly practiced where the perfect-ten mentality was not required; in fact, perfection is the antithesis of yoga principles.  After hanging up her poms poms and retiring from her ACC Cheerleading career, Carly quickly found herself  invested in the In Balance Yoga Community in Blacksburg, VA.  With encouragement and affirmation from Studio Owner, Becky Crigger, Carly set out for New York City to train with Dana Trixie Flynn at Laughing Lotus Love Skool.

Yoga Alliance 200 E-RYT, Carly has studied and practiced with many influencers and teachers all over the United States.  Carly currently teaches Thunderbolt Power Yoga®;  a powerful alignment based vinyasa flow inspired by some of her greatest influencers including, Dana Trixie Flynn and Baron Baptiste.  Carly infuses creative ideas and sequencing into her classes. Her purpose as a teacher is to inspire people to move like themselves. Carly is committed to helping students be audaciously playful in both their practice and in their lives.
