Maybe it’s my southern roots showing, but I love side dishes, I could make an entire meal out of side dishes, especially in the summer. There are a few go-to recipes I keep in my back pocket for impromptu entertainment.
You can find all of my favorite go-to recipes on my Pinterest page, but here are a few highlights that I’ve tried, tried again, modified and love — they’re sure to wake-up your appetite and leave your taste buds happy!
Spicy Roasted Cauliflower
It’s quick, healthy and has a nice added kick from the spices. I love serving this with a greek yogurt sauce and grilled chicken to cool the dish down.
What you’ll need: 1 head of cauliflower, 2 cloves of crushed garlic, red pepper flakes turmeric, cumin, salt, olive oil
Preheat the oven to 350 degrees.
Rinse and chop the cauliflower.
Toss with 2 Tbsp of olive oil and equal parts turmeric, red pepper flakes, cumin and salt. (I suggest 1 Tbsp of each!)
Spread across a lined baking sheet and bake for 20 minutes, or until cauliflower starts to brown
Serve! (Optional Bonus— add cilantro for a touch of flavor and color)
Quick Quinoa Salad
This is a great recipe to whip-up and keep in the refrigerator all week.
What you’ll need: quinoa, chopped feta cheese, canned black beans (drained and rinsed), corn (off the cob), chopped fresh spinach, diced red onion.
Cook the quinoa according to package instructions. Once it’s cooked, allow to cool to room temperature.
Toss quinoa with remaining ingredients.
Serve! (Optional Bonus— it tastes great on its own, but you can add a quick dressing of olive oil, lemon juice, salt and pepper to taste.)
Most southerners serve okra fried, but okra is actually delicious when roasted properly.
What you’ll need: fresh okra (halved), olive oil, salt, pepper
Preheat oven to 425
Toss okra in olive oil, salt and pepper
Spread evenly across lined baking sheet
Bake for 10-15 minutes, or until okra is crisp-tender.
